The Belize Hospital Auxiliary Cookbook - 5th Edition
The Hospital Auxiliary was founded in 1963. It is made up of dynamic women who volunteer their time and combine their efforts and skills to provide services and amenities for the welfare of the ailing and infirm in many of Belize’s public health institutions.
The Hospital Auxiliary also fulfills requests from individuals who need medical attention and other organizations whose work contributes to the health and well being of many Belizean people in need.
In order to continue this important and much needed community service, the Hospital Auxiliary continues to raise much needed funds through the production and sale of its featured Hospital Auxiliary Cookbook.
The first publication of the Belize Hospital Auxiliary Cookbook was in 1967 and after 42 years, it remains a popular cookbook in kitchens at home and abroad. This 5th Edition contains some exciting new recipes and many traditional Belizean and international favorites. GraceKennedy (Belize) is proud to be in partnership with the Belize Hospital Auxiliary.
GraceKennedy Belize is proud to announce the launch of the new edition of the Belize Hospital Auxiliary Cookbook. This new edition was published in conjunction with GraceKennedy (Belize) and includes several new Grace recipes which came from the Grace recipe calendars published over the years and contributed by Belizean cooks.
The cookbook includes 282 recipes which contain several suggested Grace products as ingredients. It also features a conversion sheet which and notes page.

Two featured Recipes from the Belize Hospital Auxiliary Cookbook:
Grace Cherry Chocolate Drink
2 large Grace Evaporated Milk
4 tbsps. Grace Cherry Syrup
5 tbsps. Grace Instant Chocolate
1 can condensed Milk
Blend all ingredients in blender.
Place crushed ice in tall glass.
Pour blended mixture over ice.
Place drinks in freezer for 10 mins. before serving.
GRACE RICE AND BEANS MEDLEY
1lb. dry red beans 1 tsp. fresh minced parsley
5 pods garlic 1 1/2 tsps. salt (or to taste)
1 onion, chopped 1/2 tsp. black pepper
1 green pepper, chopped 3 cups rice
1 1/2 cups celery chopped 2 cans Grace coconut milk
1 bay leaf 3 tbsps. Grace coconut oil
METHOD: Rinse and drain beans. Add 4 pods garlic and put in a large pot.
Bring to a boil and cook until beans are tender. Stir fry remaining garlic,
onions, Pepper, celery and bay leaf. Continue simmering 1 1/2 hours or
until beans are soft. Add parsley, salt, and black pepper (if needed). Pour
beans into medium size pot. Wash rice and add to beans in the pot. Add 2
can’s Grace coconut Milk to cover rice. Add salt to taste. Cover and cook
on low to medium heat for 45 minutes, or until rice is tender.
Serve with stew chicken, potato salad & fry plantains Yummy!
